Only one rig to use in my opinion - single hook paternoster with a french boom. The sinker should have a "rotten bottom" so that you don't lose a fish if the sinker gets trapped in the wreck. I personally achieve this by using a paper clip to hold the sinker on. This may sound daft but I promise that it works.
BTW, using a rubber eel or a jelly worm on a three/four foot snood can sometimes give better results than live bait, I have seen bass and cod caught this way. Of course, you have to keep such lures on the move, best achieved by letting the rig drop until you feel it touch bottom then lifting it a couple of feet and jigging by some means.

4/0s should suffice also you can use muppets in place of rubber eels.
