why is it that when if bag up my fish in a cool bag with a freezer block and take them home, when i unpack , some have stiffened up (which i would have expected, but some are still very 'floppy'?

In a small fish the Rigor might have come and gone by the time you get home.

could it also have anything to do with how mucg the fish twitches after dispatch .. lactic acid ?
