Hi guys is there a nice way to cook ray and wat is the niceist type of ray :-/

Have tried spotted,small eyed,undulate,thornback and blonde and prefer them to eat in that order though most spotties are too small and go back........I like them grilled or fried with butter caper and black pepper sauce.......... Skin the wings and freeze them for at least a fortnight , this is important to get rid of the ammonia in the flesh . Fresh `skate' can be inedible if you dont give the ammonia a chance to clear. Don`t forget the oysters ( jaw muscles ) as they`re the best bits. Good eating !

Plain flour and ice cold water to make a batter,get it to look like a cross between single and double cream,add a little sugar,flour the wings dip in the batter and deep fry for a good crispy batter.yum yum
