what type of wrasse is it..

most are really only good for soup, if its bigger ,though, like a ballan, bake it whole.
make a bed of onions, garlic, smoked bacon and potatoes. bake at 200c/400f (gas 6) untill soft then add the fish with some white wine and bake for 10-15 min

Take my advice mate and put the wrasse back in the water - they are very bony and don't have a great taste. I don't know anyone who cooks them and you never see them on fishmongers's slabs which should tell you what you need to know.
