Flatfish on the BBQ

Post by conga » Sun May 09, 2010 9:07 pm

Found a useful tool in Sainsburys for this, its designed for burgers or sausages but holds fish together very well. Its a square grill with handle but is adjustable for three different thicknesses of food.Came in very useful last weekend while cooking for about 30 people at our grandaughters birthday BBQ

I cook mine whole with a bit of olive oil and lemon juice brushed on-it cooks fairly quick, when the dark top skin begins to split its should be cooked through(I turn it in the food holding grill I described when the white side is done) I take off the head and tail if they dont fit in the grill but if smaller I dont usually bother,The grill keeps the fish nicely in one piece and avoids it breaking up by trying to turn it with tongs etc.If you like flatfish give it a go and let me know what you think,to me its another way of cooking them.Cheers,Mick :D :D
