put in a heatproof bowl 1 tbsp white wine vinegar the yolks of 6 eggs beaten and a little salt and black pepper. place the bowl over some just simmering water whisking all the time. gradualy whisk in, in 1 inch cubes a whole pack of good butter make sure the mix does not get too hot as it will then split if it does start to split add 1 tbsp cold water and whisk this should bring it back when all the butter is added remove from the heat and allow to thicken slightly before serving this recipie is enough for 4-6 people and goes loveley with lobster or prawns enjoy. :wink:

Try this for faster results:put vinegar ,salt and pepper in blender along with egg yolks.Melt butter in measuring jug in mirowave.Then switch blender on ,whilst very slowly drizzling all butter in through small hole in lid until all butter is incorporated. Works everytime! Good luck ! 8O
