Ok,this is my personal preference for cooking the good stuff.
I always cook my fish 'skin on'.
Bring a large saucepan of water to the boil,add about 3 tablespoons of full fat milk and a squirt of lemon juice,boil again,then turn down to a simmer.Put in the fillets and cover saucepan,leave to simmer gently for about 10 minutes,remove and place on a bed of mashed potato,salt to taste and garnish with fresh parsley and maybe a nice cheese sauce.Simple and utterly delicious.
Fish is one of the few fresh foods that cook excellently in the microwave too,so there's another option.Place the fillet in a little water and season accordingly,nuke for about 3 or 4 minutes on full power and hey presto..Fish Ding!.
