Seeing that both rods are 6ft then you won't be uptiding so grip weights are not needed,

Weights from 5oz to about 9oz should be enough for your needs.
Fishing from the side of thr boat you will need to use enough weight so as to be in contact with your weight ie you can feel it on the sea bed without the weight drifting.

If you are fishing the back of your boat use a weight that will drift for about 20 to 30 yds so as to cover more ground.

In a strong tidal race you may need to use far heavier weights.

15lb to 20lb line in shallow water up to say 20ft deeper than this 30lb to 50lb line.

As for rigs I stick with a 2 hook flaper with a running ledger so as to fish 3 hooks, use long shanked hooks whenever possible to make hook removal easier.

Hooks are a different mater all I can say is to select the hook sizes to suit the type of fish you are targeting.

Cheers

An impossible question really. It all depends on where you're fishing, for what, and state of tide.

Leads can be anything from 1oz to 1.25lb, rigs flowing trace to traditional paternoster, hooks 2 to 8/0.

Best to decide what you want to fish for, then ask a local expert. Plenty of bass fishing in the Solent, for which flowing trace, 1/0 hooks and fairly light leads are a typical method (drifting), but all depends on where, when, etc

....... also is there not a risk of lines getting tangled with 'x' amount of people on a boat?

The idea is for those who fish the front of the boat to use heavier leads so that the tide don't take their lines into the next chap towards the back of the boat and so on.

Until those at the back are using the lightes weights of all.

Unfortunately this doesn't always work in practice as you either get someone new to boat fishing and needs help or you get those that know it all with the notion of Sod you I'll do it my way like I have done for years, not realising that as well as buggering up somone else's day out, they are making a cock up of their own.
Cheers
