| Next time you catch [or your mate catches ] some jumbo pout, fillet and stash a.s.a.p take it home and hot smoke it .Great in fish pies instead of expensive haddock plus you don`t have to watch it float away on the tide.Brining and cooking times will vary with size of fillets.Freezes ok after smoking. |

no seriously i love smoked fish but never thought of trying pouting will have t give it a go cheers mate |
