tastes great
gut and fin it cut into 3 inch chunks Do not bother skinning. Wrap in tin foil with a bit of olive oil and oven bake for 1/2 hour.
Once cooked the skin peals off. Great with baked spud and salads. It is also good cold |

| firstly do as this dude suggests but for a spicier style add chilli and garlic (just a little, till you get the taste you like, may have to toy with amounts) or if you watch the biker cooks on sat. put a spicey bread crumb top still using chilli and garlic parsley and cumin, and bake saturday kitchen web site . its a worlds your choice in how to cook, do what you think you like.. soup, pie, bake, grill, fry, bbq, steam.you could be the next rick stien! |

| Another nice one that works with all hounds, dogfish etc is to skin and fillet lengthways into 2 long fillets. Then cut into strips around an inch wide and 4 inches long. Coat in seasoned flour then dip into egg yolk and then breadcrumbs and fry, either shallow or deep fry and serve with tartar sauce. Very similar to plaice goujons. Another alternative is to cut into large cubes and again egg and breadcrumb and cook the same as scampi. |
