Ingred: Brocolli , 2 large cod fillets, potato (in pic pot is just boiled you could have mash etc) mushrooms and sauce of choice ( i used a parsley sauce that just needed to simmer for 3 mins)

Boil potato and brocolli for the amount of time that suits your preference. Fry mushrooms in generous amount of butter medium heat, when done place in saucepan and pour sauce on top. Add generous amount of oil to large frying pan and heat on high temp, when sizzling, turn down to low temp and place fillets skin down for 4-5 mins, then flip fillet over (i used two spatulars big grin ) and cook again for 4-5 minutes, flesh should turn white. Place everything on a warm plate and cover with sauce.

This was one of the best fish meals i have ever had, and i catch alot of salmon, sea trout and rainbow etc so look out cod im after you more then ever now
