Anybody got any good BBQ recipes for the summer? I hope to cook BBQ mackerel but do you cook it in foil or just chuck it on the heat after covering it in BBQ sauce :?: How do you do it :?:

Gut, top and tail. Lemon wedge in belly, drizzle of olive oil. Wrap in foil and give it about 10-15 minutes depending on how hot the BBQ is.

If it's mackerel, use tin foil but cook it quite slowly or you'll blast all the flavour out of it. The thing with mackerel, is that it is a really tasy fish anyway so you don't need to do much with it. You could try cracked pepper and a bit of lemon, but cook it slowly, and make sure you turn it from time to time.

I always do fish in foil as it breaks up really easiliy if it isn't held together.

A good way to do small Anja potatoes is to boil the for about 10 mins, then put them in tin foil with butter and loads of gralic and throw it on the BBQ for about 20 mins. Crack some sea salt on and you should be on to a winner.

Just hope it doesn't rain, or you'll be BBQing under the garage door.

:-)
