Thai whiting fishcakes
Fish cake mix;
2 whiting fillets (200g approx)
Couple drops of fish sauce
1 lime leaf finely chopped
½ lemon grass stalk finely chopped
¼ tsp ground ginger
1 small egg white
Salt
Chopped fresh coriander
Chilli sauce;
1 large chilli chopped (seeds removed if preferred)
Handful of sugar
Water
Lime juice, or rice wine vinegar, or red wine vinegar
½ lemon grass
1.Skin and remove any bones from the fillets and add to a food processor with all the other ingredients. Blend to a smooth paste scraping the sides down a few times in between.
2.Place the mixture in the fridge for a couple of hours then shape into small balls or cakes. By this time it should be firm enough to handle.
3.For the chilli sauce simply add the sugar, chilli and lemon grass to a pan and just cover with water. Bring this to the boil then turn down and cook for a few minutes.
4.It should be a light syrupy mixture, add more water if it is too thick. Add a squeeze of limejuice or the vinegar to taste and leave to cool.
5.Meanwhile pre-heat a pan of vegetable or sunflower oil (at least 5cm deep) to a medium heat. Drop a small piece of mix into the oil, if it sizzles and rises its ready.
6.Roll the cakes in plain flour shaking off any excess. Place a few at a time into the oil and cook for a few minutes or until golden
7.Drain on some kitchen paper and serve immediately with the sauce.

Nice effort there, they look good.
I always throw my whiting back, but perhaps i should start keeping some of the better sized ones. |

cheers keith.. a few guys i met from thames estury seemed interested in what to do with whiting.. Am happy to post a few more but doesn't seem like many people check for recipes?? (more into the catching!!)
looking forward to hearing if anyone has a go at them..

great post skuffa
after read i tried something similar with the whiting i cuaght on thames meet.
wized up about 300g whiting with 200g crab meat ,fresh ginger chilli spring onions soya sauce and rice wine vinegar, served them as canape's at a party they were gone in secounds.
I will be visiting the OJ soon for more whiting and hopfully a cod.

Whiting is a very under rated Fish. I love it. i keep all my whiting that are big enough and enjoy eating them.
Ive always said they make the best fishcakes due to their cracking flavour. |

Happy new year mate
I might go to grays on my next fishing trip in about a week or 2 if you fancy it. Bit fed up of lugging my fishing gear over an assault course for half an hour before my 1 hour drive home  |
