Skin um first , bit of a knack , if not parr boil , then remove skin.
Dont let skin disintergrate , as it turns into something like wet sand paper.
Infact the skins used to be dried and used by french polishers .
The best way to cook them is to make fish cakes with them.
Boil until cooked (dont be put off by smell) remove and let cool. The beauty of Dog fish is that ther is only realy the main spine. Remove meat from bone with fork , pulling flesh away from spine.
Boil some spuds and mash.
Mix mashed spud with fish . Add fresh Parmasan , pepper , salt , beaten egg, bread crumbs , parsely. Oh and a clove of crushed garlic.
Make into shape of fish cake , using flower as coating . Can use bread crumbs for coating if you wish.
Gently fry.
Tell you , whats real nice , serve with Cauliflower cheesse.
This is a recipe , except for Parmasan , my Grand mother used to make.
Very nice.
