Try running your hand down over the fillet where the backbone will have come from. You should feel if thier are any bones remaining. To remove the bones you can either invest in a pair of pin boning tweezers (a bit like normal tweezers but with a larger flatter head) or use a pair of tongs like I do. The tweezers are best and don't mess the flakes of fish up quite so much. but as a quick emergency measure use the tongs. The only reason to use a tool at all is to get a good grip on the bone, as you will know they can be quite tough sometimes!

I found this link on the web. These are very expensive, but I am sure you could a get a cheeper set (£2-£3) at a fairly goog kitchen store.

Hope this helps.

Try this as a starter

Another good source is Rick Steins book called Seafood

It is really good at explaining everything to do with Seafood (believe it not!)

I have this book at it's a great reference guide and has some cracking recipes as well.

Cheers
