hi every one when you gut flatfish do you just cut the head off and scrape the guts etc. out with a knife confused

You can fillet them, There is a link somewhere on the forum but Im not sure where.

Yep if you cut the head right off then you can gut them with your finger.keith

cut the head ,tail and fins arond the edges
yank the guts out , then dipi n egg, then flour, then egg ,then breadcrums then fry whole in a pan for about 2 mins each side ,depending on thickness to spice it up add some spice to the breadcrums ,chill or paprika etc etc

or fillet it and fry skin side down first , dont keep turning it oyer as it will fall to bits
