Nothing wrong with flounders, always tasted ok to me and i used to eat them when i caught them from budds wall winking

I must admit not one of my favourit fish for eating, but good fun on what would otherwise be a blanking day.

have caught many flounders from the pier &/or beach at southend & have always taken the sizeable ones for the pot.

They have a great flavour if cooked in butter & lemon juice & are a tasty addition to fish pie or stew big grin

My lad caught this flounder from southend last year(well he reeled it in), took it home filleted it fried seasoned in a hot pan, said it was the best fish he ever tasted.

Don't know about left eye right eye, but if the roe is orange it's female if it's beige / cream it's a fella ; - )
Don't mess about with them, seasoned flour & a hot pan, you can't go wrong.

Could hardly believe my eyes there's a flounder recipe in today's Mail.

4 Medium Flounder
50g butter
2tsp capers
12 cherry toms chopped
12 olives chopped
finely grated zest of 1 lemon
6 sun dried tomatoes finely chopped
handful of fresh parsley
OR BASIL ROUGHLY CHOPPED
1 1/2 TBSP OLIVE OIL
SALT & FRESH BLACK PEPPER
Salad & new pots to serve

Make 3 slashes in the dark sides of the flounder & put onto an oiled baking tray.
Season well & dot with butter. Grill for 10 - 15 mins until the skin is beginning to brown & the flesh is opaque & just cooked through.
Meanwhile mix the other to make a salsa spoon over the fish & serve. happy suprise suprise suprise suprise suprise

Steam them with some sliced spring onion, garlic and lemon juice and they are fine, not as nice as other flatties but they are fine.

Sorry but flounder always taste of iron filings or battery acid, not a fish I would keep for the table, the only upside is that they do save you from a blank now and then
