As the title says..how do you prepair them for cooking?

I have gutted em and removed the heads but am unsure about the soft white flesh (looks like mash potatoe) on the underside..is this meat??

Very productive days fishing, and two very large ones came home for my tea...so reply quick coz I'm starving hahahaha.......only kidding.
