I believe matching the circle hook size to the size of fish is very important. A small circle hook is unlikely to get a good hold on a big fishes jaw .

I think i read somewhere that dogfish will swim for 2-3 days after having their brains surgically removed.

Looks like you had a nice day for it and a few fish. The gurnard is a tub not a red, the red gurnard does not have blue edges to the pectoral fins.
